Meet Our Executive Chef
Chef Nicholas Pena-Alvarez is an award-winning Chef with over 25 years of global experience in kitchen management, menu design and development, catering and banquets, and team building and mentoring. During his career he has built a diverse background of culinary and managerial expertise developed in hotels, cruise ships, Relais & Chateaux Michelin restaurants and the culinary education field. Chef Nicholas is a World Master Chef Society Member and Certified Chinese Pastry Master.
Alongside a wide international selection, we offer the best locally produced beverages. We source much of our wine from Canada’s world-renowned Okanagan Valley vineyards. Our distillery partners use regional ingredients to create unique spirits that can be enjoyed alone or in delectable cocktails. We recommend starting with a Caesar cocktail, an infamous Canadian staple born in Calgary.
