Meet our Executive Chef ~ Derek Dale
One of Calgary’s top 10 executive chefs, Derek Dale is responsible for the creation of all menus and food preparation at the Calgary Stampede. This means that Derek is not only an accomplished culinary artist, but that he also brings some rather high-level managerial skills to his kitchen.
"One of the challenges of my job is to maintain communication between all the various departments. The ability to respond quickly to circumstances is critical for ensuring quality preparation and presentation, in order that each and every customer has an enjoyable dining experience," says Chef Dale. "Our crew works hard to earn those customer compliments, and we savor in a job well done."
The Calgary Stampede has also formalized a “Grown right. Here.” program, which was designed to support local growers and the agriculture industry while offering its clients culinary delights. Alberta lamb from Dri-view Farms in Fort McLeod, vegetables from Broxburn Farm in Lethbridge, pork products from Broek Pork Acres in Coalhurst and goat cheese from Fairwinds Farm in Fort Macleod are just some of the local products the Calgary Stampede will be serving.
“We are excited to offer a selection of regional products to our clients and guests across the Park,” says Dale.
The Calgary Stampede is a strong proponent of eating locally-grown or raised products to promote food quality and health, reduce environmental impact and support local farmers, ranchers and business people. The Calgary Stampede is one of the largest caterers in Western Canada serving meals on and off the Park.
